Happy Halloween! If you thought Chia Seeds were only good for providing green hair for sad little bald terracotta men, well you were wrong. New discoveries have proven they can work as a hair growth aid for balding humans as well! The only side effects are the new hairs need regular watering and trimming, and you may get odd looks at your new foliage covered head.
That was the Trick for today! Now onto the Treat!
If you really haven’t thought to use Chia Seeds in food yet, well let me introduce you. Why use the little buggers? Well, they are what some internet article calls a superfood! Jam packed full of nutritious things. Why do I like to use them? They have a super power of their own, they can suck up 10 times their weight in water! So they work great for an egg substitute, thickening sauces, and making puddings! This Pumpkin Chia Pudding will be great for a healthier treat, and you can probably scare your kids by Telling them there are frog eggs in the pudding! Muhahahaha!
Pumpkin Chia Pudding:
1 Cup Pumpkin Purée
1 1/4 Cups Almond Milk (or Non-dairy Milk of Choice)
1/4 Cup Chia Seeds
Small Pinch of Ground Cloves
Small Pinch of Ground Nutmeg
Dash of Ginger
Dash of Cinnamon
Small Cap Full of Vanilla Extract
Drizzle of Maple Syrup or Agave
And whisk it all up! Taste and add more spices, or maple syrup as needed! Not sure… Don’t worry you can always add more seasoning when it’s done! Now just cover it up, pop it in the fridge, and let it hang out for about 3 hours, or overnight. That’s it! Serve it up, add more spices or syrup if needed, and if you want my goofy looking pumpkin stems, steal some mint stems and stick them in there.
