You know how there’s that whole salted caramel trend? This Strawberry Salsa is kind of like that, in the sense that there is a salty sweet combo, except it’s more on the savoury side… and on a chip. Ok, enough with the lousy comparisons. Basically this is yummy. Really yummy. Please make it now kind of yummy!
The sweetness of the strawberries, the crisp bite of red onion, the little punch of jalapeño, fresh yellow bell pepper, tang of cilantro and zestieness of lime, all piled up on a salty tortilla chip… it’s just about the best salsa one could make! So packed full of deliciousness. And really who doesn’t like an excuse to eat more strawberries. And chips.
I am so not into the store-bought salsa you can buy in a jar. It’s so boring, and squishy, and flavourless. I mean to be really, really honest, if you put a bowl of tortilla chips and a bowl of store-bought salsa in front of me, I would probably, most definitely eat the whole thing, because chips! But it never wow’s me. I guess that’s because my mom often made fresh salsa’s for me when I was a kid, and that is what I came to expect, like her Corn & Peach Salsa. Fresh, full of flavour and texture. Not the mushy cooked tomato business that comes in exciting flavours like mild or hot.
If you have never made a salsa from scratch, this is something you need to do immediately. It brings salsa to a whole other level.
Strawberries are my target ingredient for the 1/100/100 challenge, and now go chip yourself.
1 Basket of Strawberries
1 Small Yellow Bell Pepper (or other colour, but I think yellow looks pretty)
1/2 Small Red Onion
1 Clove of Garlic
Small handful of Cilantro (about 1/4 Cup)
1/2 Jalapeño (More or less to your spice preference)
1/4 teaspoon Salt
Pepper to taste
Get out all you ingredients. I know, you must be overwhelmed with the complicated instructions already!
And chop away! Chop the strawberries, yellow pepper, and red onion all into similar sized small chunks. Roughly chop the cilantro, and finely mince the garlic and jalapeño. Toss it all in the bowl along with the lime juice, salt and pepper. Serve with tortilla chips. See, easy peasy strawberry squeezy.
