You just got home, or about to be home, and you are super tired, yet you want something super delicious for dinner. Something healthy, light, summery, and yet comforting, perhaps?
Introducing my 15 Minute Mango Pasta.
This sauce doesn’t require cooking, and can be made with very little effort, in the time it takes to cook the pasta.
Now, pour yourself a glass of wine, or a cup of tea or whatever your thing is, relax, and feed yourself in no time.
(best if all or most ingredients are at room temperature)

First things first. Get your big pot of water on the stove, and get it boiling.
While your water is heating up, chop up all the ingredients. Make sure to chop the garlic extra fine.
In true It Doesn’t Taste LIke Chicken style, don’t measure anything, just make some nice piles like these. See? Easy.
When your water is boiling add your pasta, and cook according to directions. I used a whole wheat spaghetti, but any kind of pasta works.
Dump everything you just chopped up into a bowl and toss around. Season with salt and pepper. This is your sauce.
When the pasta is cooked, strain it, and then dump it in the bowl with the sauce. Toss with your cold ingredients, which will heat them up a bit, and warm the garlic. Mmmm garlicy!
