Kidding!
Lately I have been obsessing over salads. I don't know if it's because everyone goes all healthy-like for January, or if it's because I have been working on the breakfast chapter of my cookbook (gah! Excited to say that freely), and big ol' salads make me feel healthier when I am eating pancakes and maple syrup all day long. I'm thinking it has more to do with the second point. Either way, we all know you can never go wrong with a big, colourful, salad, jam packed full of healthy goodness.
Generally I just make a "guzinta" salad: whatever's in the fridge guzinta it, but sometimes it's nice to put a little more thought into a salad. So I collected these scrumptious hearty vegan salads from my blogging friends, because SALADS!
OMG! So much scrumptiousness to be devoured. The colours! The dressings! The veggies! Oh boy, salads make me excited... vegan nerd alert.

I do have a couple salads in my cookbook but over 80% of the recipes are brand new and are only available in the book! 🙂

These look amazing - I have just made one this evening for tomorrow's picnic lunch. Can you give me a list of the most commonly used oils/ vinegars etc that I will need for the recipes - I have just substituted golden syrup for maple as I didn't have any and I want to be ready in the cupboards when I carry on next week

This is a collection of recipes from all over the web (not just my recipes), so it's difficult for me to give you a list of the most common ingredients as they aren't all mine. I would take a look at the recipes that interested you and see what ingredients are required and make a little list. Hope that helps!

These recipes are not vegan. My son ate one of your salads and got an allergic reaction to the nonvegan. My son is only allergic to things that are not vegan and he got a rash and some hives on his nipples. He cant go to school for the next month because he doesnt feel good. I hope you are happy knowing you ruined my son's life.

Is this real? I'm only asking because these are only recipes and not pre made, meaning you see all of the ingredients first hand as you add them to the salad...

Yes, Chinko, I'm confused as well. I'm sorry your son is ill, but all of the recipes linked are vegan, and you prepare them yourself to your own liking using your own ingredients in your own kitchen. So if your son is allergic to anything you shouldn't use those ingredients when preparing food. I don't think you can really blame the recipe writers for that. Everyone has to be aware of their own dietary needs when preparing meals. I hope your son feels better soon.

Not so dear crybaby chinko. Do you even know what the word ruining means? An example of it would be your son ended up becoming homeless or so. You can't blame the person who wrote the recipes. Assuming your son is a child and not old enough to read the ingredients to prepare the food, it's your fault. I am a vegan, and I read everything before I consume it so that I won't put non-vegan ingredients into my body. Try it out, its rather educational.

Good news! Vegans don't eat dairy, so all vegan recipes are dairy free. All of the recipes on my blog as well as in this post are dairy free.

This post sprinkled pixie dust of inspiration over my whole day today. My breakfast and lunch were both salads. The same salad split in half actually 🙂 I am writing a quick grocery list now and I am usually very poor at that skill but this post is helping with my decision making, so thanks!
