This dip takes just 5 minutes to make and is insanely creamy without any dairy! Like cool ranch but with the added zing of celery salt. Vegan, oil free, gluten free, quick and easy recipe. Adapted from my Creamy Cashew Caesar Dressing
Add everything to a blender, and blend until completely smooth and creamy, stopping to scrape down the sides as needed. This dip will get even thicker when stored in the fridge.
If you do not have a high-powered blender such as a Blendtec or Vitamix, you will want to soak or boil the cashews first so they will be soft enough for your blender to process. To boil the cashews: add the cashews to a small pot, cover with water and boil for 10 to 15 minutes until cashews are very tender. Drain before using. OR To soak the cashews: cover the cashews with water and let soak for 6 hours or overnight. Drain before using.
