Mash the avocados: Scoop the avocados into a medium bowl and mash with a fork until chunky but creamy.
Season the guacamole: Add the lime juice and salt and gently stir to combine. Fold in the red onion, cilantro, and jalapeño. Taste and add more salt or lime juice if needed.

Avocado tip: Use ripe avocados that give slightly when gently squeezed for the best creamy texture and flavor. When shopping for avocados, I usually prefer to buy the hard green avocados and let them ripen on my counter. The ripe avocados in the store have often been squeezed by many hands (meaning they could be bruised). If your avocados are perfectly ripe but you are not quite ready to use them, transfer them to the fridge and they will keep perfectly for several days.Adjust the heat: For a milder guacamole, remove the seeds and ribs from the jalapeño before chopping. For more heat, leave some in, or add more jalapeño.Storage: If making ahead, press plastic wrap directly onto the surface of the guacamole to help prevent browning. It is best enjoyed the same day, but will keep in the fridge for up to 24 hours.
