Vegan Egg Yolk
It's a vegan egg yolk! Just 5 minutes to make, only 6 ingredients, is completely cholesterol free (unlike the cholesterol bombs of an egg yolk), and is incredibly, super delicious with toast dipped into it. Rich, creamy, savory, umami, with a crack of pepper on top, oh yeah, I am loving my breakfast today!

Servings: 4 (makes about 1 cup)
Storage: store leftovers in a sealed container in the fridge for up to 4 days. Reheat gently on the stovetop or in the microwave, whisking well and adding a splash of water if needed. The sauce can also be frozen; thaw before reheating.
Microwave option: Whisk all ingredients together in a microwave-safe bowl. Microwave on full power in 30-second intervals, whisking well between each one, until thickened, about 2–2½ minutes. In my microwave, one batch takes about 2 minutes 10 seconds.
Color note: Turmeric can vary a lot in color from brand to brand, so your egg yolk may look more yellow, orange, brownish, or even slightly green-toned than pictured. The turmeric is only for color, so feel free to reduce or omit it, or use a tiny drop of yellow food coloring instead.
Want an even eggier flavor? Black salt (kala namak) is what gives this sauce its eggy flavor. The flavor can mellow the more the salt cooks, so if you want an extra eggy punch, add another small pinch to taste just before serving.
