This White Bean Dip turns butter beans or cannellini beans into a silky, lemony dip with a little garlic and olive oil. Ready in 10 minutes with no cooking required, it’s an easy vegan snack, appetizer, or sandwich spread.
Optional toppings: Drizzle of olive oil, lemon zest, chopped fresh parsley or dill, crushed red pepper flakes, coarsely ground black pepper, or flaky salt
For serving: Pita triangles, crackers, crostini, tortilla chips, or fresh vegetables
Blend the dip: Add the butter beans, lemon zest, lemon juice, olive oil, garlic, salt, and pepper to a food processor or blender. Blend until mostly smooth.
Make it creamy: With the food processor running, drizzle in the ice water 1 tablespoon at a time until the dip is silky smooth and creamy, scraping down the sides as needed.
Serve: Spoon the dip into a serving bowl and garnish as desired. Serve immediately with pita, crackers, crostini, tortilla chips, or fresh vegetables.
Notes
Butter beans: Butter beans (also called lima beans) have a naturally rich, creamy texture that makes this dip especially smooth. Cannellini beans work just as well if that's what you have on hand.Storage: Store in an airtight container in the refrigerator for up to 5 days. Give it a quick stir before serving and add a splash of water if it has thickened.Oil-free option: Omit the olive oil and add extra ice water as needed to reach a smooth and creamy consistency. For a little extra creaminess, add 1 tablespoon tahini.
