Ingredients

For topping:

  • ¼ cup vegan vanilla yogurt or vegan whipped cream
  • 1 teaspoon cocoa powder for dusting
  • Optional: Shaved dark chocolate or crushed vegan vanilla cookie like a graham cracker or vanilla wafer

Instructions

5-Minute Tiramisu Chia Pudding (Quick Method)

  • Activate the chia seeds: In a small bowl, combine the chia seeds and ½ cup hot water (not boiling). Stir well and let sit for 2 minutes. The mixture will start watery, then quickly thicken as the chia seeds absorb the liquid. Stir again before adding the milk. If the mixture hasn't thickened yet, wait another minute before continuing.

  • Add flavorings and milk: Stir in the agave or maple syrup, vanilla, espresso powder, cocoa powder, and salt (if using). Mix well, then add the ½ cup plant-based milk and stir again, breaking up any clumps.

Overnight Tiramisu Chia Pudding (Classic Method)

  • Mix: In a bowl or jar, combine the chia seeds, ½ cup cold water or plant-based milk, ½ cup plant-based milk, agave or maple syrup, vanilla, espresso powder, cocoa powder, and salt (if using). Stir very well to combine.
  • Refrigerate: Let sit for 5 minutes, then stir again to break up any clumps. Cover and refrigerate for at least 2 hours or overnight, until thickened.
  • Layer and serve: Stir again, then divide the pudding between 2 small jars or glasses. Top each with 2 tablespoons of vegan yogurt or whipped cream, dust with cocoa powder, and add shaved chocolate or crushed cookies if desired.

Notes

Stronger tiramisu flavor: Add a splash of coffee liqueur extract or a drop of almond extract (tastes a little like amaretto).
Using brewed coffee instead of espresso powder: Replace the ½ cup water with strong brewed coffee or prepared espresso, and omit the espresso powder. For the quick method, use hot coffee (not boiling). Coffee can slow chia thickening, so refrigerate for 15–30 minutes if needed. For the overnight method, use cooled coffee and refrigerate as directed.
Doubling the recipe: Larger batches may take longer to thicken, especially with the quick method. You can warm the plant-based milk before adding it to help speed things up.
Storage: Store covered in the refrigerator for up to 3 days. For meal prep, keep the toppings separate until ready to serve.
