    Creamy, coffee-kissed, and cocoa-dusted, this Tiramisu Chia Pudding is like having dessert for breakfast. But here's the secret: it's actually good for you! With my hack, this pudding is ready in just 5 minutes (no overnight soaking required), so it's perfect for busy mornings, meal prep, or when you want something indulgent without the fuss.

    I love my classic 5-Minute Chia Pudding, but I wanted to take that wholesome treat and add an even more indulgent, dessert-inspired flavor. Hello, Tiramisu Chia Pudding! The chia seeds absorb the water and plant-based milk, giving the pudding a thick, creamy texture, completely dairy-free. Espresso powder, vanilla extract, and cocoa powder combine for that authentic tiramisu flavor. With a layer of Vegan Whipped Cream or plant-based vanilla yogurt on top, you'll feel like you're eating a decadent dessert.

    Ingredients for Tiramisu Chia Pudding

    • Chia seeds: White or black both work. Tip: I store my chia seeds in the freezer to keep them extra fresh.
    • Espresso powder + cocoa powder: For that tiramisu-inspired coffee-chocolate flavor.
    • Hot water: Speeds up the thickening process so you don't have to chill it overnight.
    • Agave or maple syrup: For natural sweetness.
    • Vanilla extract: To enhance flavors. A tiny touch of almond extract is also a nice addition (tastes a little like amaretto).
    • Plant-based milk: Any plant based milk will work here but oat milk or soy milk are my go-to's for creaminess.
    • Toppings: Vegan yogurt or whipped cream, plus cocoa dusting, shaved chocolate, or cookie crumbs if you want to play up the tiramisu feel.

    How to Make Tiramisu Chia Pudding

    1. Mix the chia and water: Stir together the chia seeds and hot water in a small bowl. Let the mixture sit for 2 minutes, until it thickens.

    1. Thicken: Let the pudding rest another 2 to 3 minutes, until it's thick and creamy.

    1. Layer and serve: Stir and divide the pudding into jars or glasses. Top with vegan yogurt or whipped cream, dust with cocoa powder, and add any garnishes you'd like.

    Tips and Variations

    • Make it smooth: If you're not into the texture of chia pudding, add the pudding to a small blender and blend it for a creamy tiramisu mousse vibe.
    • Amp it up: A splash of coffee liqueur extract or a drop of almond extract (for amaretto flavor) takes it next-level.
    • Use brewed coffee: Swap the water for strong hot coffee or espresso. Just note it may need a little chilling time to thicken. (See notes for instructions).

    Tiramisu Chia Pudding (5-Minutes, no chilling)

    Ingredients
     

    • 4 tablespoons chia seeds
    • ½ cup hot water, (not boiling)
    • 2 tablespoon agave or maple syrup, (or to taste)
    • ½ teaspoon vanilla extract
    • 1 ½ teaspoon espresso powder
    • ½ teaspoon cocoa powder
    • Pinch salt, optional
    • ½ cup plant-based milk, (such as oat or soy)

    For topping:

    • ¼ cup vegan vanilla yogurt or vegan whipped cream
    • 1 teaspoon cocoa powder, for dusting
    • Optional: Shaved dark chocolate or crushed vegan vanilla cookie like a graham cracker or vanilla wafer

    Instructions
     

    • Mix the chia and water: In a small bowl, combine the chia seeds and hot water. Stir well and let sit for 2 minutes. It will look watery at first, but after 30 seconds it will begin to thicken, and within 2 minutes it will be quite thick. Stir again before adding the milk to make sure it has thickened properly (it should look clumpy). If it isn't clumpy yet, wait another minute before continuing.

    • Add the flavorings and milk: Stir in the agave, vanilla, espresso powder, cocoa powder, and salt. Mix well. Then add the plant-based milk and stir again breaking up any clumps. Let rest another 2 to 3 minutes. The pudding will go from thin to thick as the chia absorbs the liquid.
      Note: if doubling the recipe, it might take longer to set. You can optionally warm the plant-based milk before adding it, which will help it set quicker.

    • Layer and serve: Stir a final time to ensure it is mixed, then divide the pudding between 2 small jars or glasses. Top each with 2 tablespoons of vegan yogurt or whipped cream and spread into an even layer. Dust with cocoa powder, then add shaved chocolate or crushed cookie if desired. Enjoy immediately or store covered in the fridge for up to 3 days.

    Notes

    Stronger tiramisu flavor: Add a splash of coffee liqueur extract or a drop of almond extract (tastes a little like amaretto).
    Using brewed coffee instead of espresso powder: Swap the hot water for strong hot coffee or prepared espresso. Note: the acidity in coffee slows chia thickening, so chill the mixture for 15 to 30 minutes after step 2 to help it set.
    Meal prep tip: This recipe doubles easily and makes a great grab-and-go breakfast.

      Shoot on my 5 star review I mentioned I made it less caloric but forgot to mention I doubled the recipe and used 2T maple syrup and 3 stevia packets. Still tastes wonderful. It's a keeper.

      This was delicious! I modified to make a little less caloric. I used 2 T maple syrup and 3 packets of Stevia.Thia is a keeper.

      We are unable to find espresso powder anywhere. What can we substitute for that?

        Hi Sandy, espresso powder should be easy to find is most grocery stores in the coffee section along with the instant coffee, or you can order it online. If you can't find it then check the recipe notes on how to use brewed coffee instead of espresso powder. I hope that helps!
