Before I went vegan, a spicy sausage tomato-based pasta was one of my absolute favourite dishes. So, when I made my Vegan Italian Seitan Sausage recipe, I knew just what to do with it! This Vegan Spicy Sausage Pasta is everything I ever wanted and more. Thick slices of homemade or store-bought vegan sausage tossed in a spicy tomato sauce with your favourite pasta. It's hearty, comforting, and so easy to make!

If you're using store-bought vegan sausages (or have homemade sausages ready to go), this dish is super quick to prepare, making it a wonderful weeknight meal. I use a jar of store-bought tomato pasta sauce but amp it up with sautéed onions, garlic, and red pepper flakes to make it taste extra delicious!

I love using my homemade Vegan Italian Seitan Sausages in this recipe, but store-bought vegan Italian sausages work wonderfully too! Use whichever you prefer. Mild or spicy sausages are both delicious here, and you can easily adjust the heat by adding more or less crushed red pepper flakes.

How to make Vegan Spicy Sausage Pasta:

Pan frying sliced vegan seitan sausages

If using store-bought vegan sausages, check the package directions for any required cooking instructions. Slice the prepared sausages diagonally into thick slices. In a large pan, heat 1 tablespoon of olive oil over medium heat. When hot, add the sliced sausages and fry for a couple of minutes on each side until browned. Remove from the pan and set aside.

Sauté onions, garlic, and red pepper flakes for a spicy tomato pasta sauce

Return the pan to the heat and add the remaining tablespoon of olive oil. Add the onion and garlic and sauté for about 4 minutes until the onions start to turn translucent. Add the crushed red pepper flakes and continue to cook for another minute until the onion begins to brown.

*If you prefer a non-spicy pasta you can omit or reduce the crushed red pepper flakes.

    Spicy marinara in a pan

Add the tomato sauce and heat through.

*I love adding freshly sautéed onions and garlic to a store-bought sauce to enhance the flavours and make it taste homemade. If you made your tomato sauce from scratch you can choose to omit the extra onions and garlic if you wish.

Once the sauce is hot, add the pasta and sausage slices to the sauce and toss well to coat. Serve with a sprinkle of Parmegan if desired.
    Bon appetegan!

    Ingredients

    • 16 oz rigatoni or pasta of choice

    • 2 tablespoons olive oil, divided
    • ½ yellow onion, chopped
    • 3 cloves garlic, minced

    • Vegan parmesan, for serving
    US Customary - Metric

    Instructions

    • Bring a large pot of water to a boil and prepare the pasta according to package directions.
    • Slice the prepared vegan sausages diagonally into thick slices. In a large pan, heat 1 tablespoon of olive oil over medium heat. When hot, add the sliced sausages and fry for a couple of minutes on each side until browned. Remove from the pan and set aside.
    • Return the pan to the heat and add the remaining tablespoon of olive oil. Add the onion and garlic and sauté for about 4 minutes until the onions start to turn translucent. Add the crushed red pepper flakes and continue to cook for another minute until the onion begins to brown.
    • Add the tomato sauce and heat through.
*I love adding freshly sautéed onions and garlic to a store-bought sauce to enhance the flavours and make it taste homemade. If you made your tomato sauce from scratch you can choose to omit the extra onions and garlic if you wish.
    • Once the sauce is hot, add the pasta and sausage slices to the sauce and toss well to coat. Serve with a sprinkle of Parmegan if desired.

    Notes

Vegan sausages: I love using my homemade Vegan Italian Seitan Sausages (3 sausages = ½ the recipe), but store-bought vegan Italian sausages work great too! Use about 3 sausages, or roughly 12 oz (340 g). If using store-bought, prepare according to package directions if needed before slicing and browning.
Make it less spicy: Use mild Italian vegan sausages and reduce or omit the crushed red pepper flakes.
Timing: The 25-minute recipe time assumes your sausages are already prepared. Making homemade sausages from scratch will take additional time.

I made this tonight. It was amazing! I have a bad sensitivity to gluten so I used Lightlife gluten free Spicy Italian Sausage. Added Kale from the garden. Thank you
