It's almost strawberry season here in Ontario, which is easily one of the best seasons of the year. I get so excited about those juicy, sun-ripened berries that I just couldn't wait and had to get my strawberry fix early. This homemade strawberry milk is the perfect way to use fresh or frozen strawberries and turn them into something a little special. It tastes like a lighter version of melted strawberry ice cream... need I say more?!

Why This Strawberry Milk Is So Good

Ingredients for Vegan Strawberry Milk
- Strawberries (fresh or frozen): Fresh strawberries give the brightest flavor, but frozen work just as well and are perfect when strawberries aren't in season.
- Water: Helps cook the strawberries down into a smooth, pourable syrup.
- Agave or maple syrup: Sweetens the mixture and brings out the best of the natural strawberry flavor. Start with less and add more to taste.
How to Make Strawberry Milk

- Combine: Add the strawberries, water, and ¼ cup of the agave or maple syrup to a small pot.

- Simmer: Bring to a simmer and cook for 5 to 10 minutes, until the strawberries break down and become soft and jammy.

- Strain: Place a fine mesh strainer over a bowl and pour in the strawberry mixture. Use a spatula to press and mash the strawberries, extracting as much syrup as possible.

- Sweeten to Taste & Use: Taste the syrup and add more sweetener if needed. Pour a glass of your favorite plant-based milk and stir in the strawberry syrup to taste. About 3 tablespoons syrup per 1 cup milk is a great starting point.
Tips & Variations
- Adjust the sweetness: Start with less sweetener and add more after straining if needed. Since we're using a liquid sweetener, you don't need to worry about dissolving it!
- Don't waste the pulp: The leftover strawberry pulp tastes like a lightly sweet jam. Use it on toast, oatmeal, or in smoothies.
- Not just for milk: This syrup is amazing on pancakes, waffles, vegan ice cream, or stirred into oatmeal.

Storage
Store the strawberry syrup in an airtight container in the fridge for up to 1 week. Stir before using.

- 2 cups strawberries (fresh or frozen)
- ½ cup water
- ¼ - ½ cup agave or maple syrup
Instructions
- In a small pot, add the strawberries, ¼ cup of the agave, and water. Bring to a simmer and cook for 5 to 10 minutes until the strawberries have basically turned to mush.
- Put a fine mesh strainer over a bowl and pour the strawberry mixture in. Use a spatula to smush the strawberries through the strainer as best as you can. Leftover strawberry mush can be used on top of oatmeal, in a smoothie, or just spread on toast. It tastes like a lightly sweet jam!
- And now you are left with your gorgeous syrup! If you prefer a sweeter syrup, just add up to ¼ cup more agave to taste.
- To make strawberry milk: pour a glass of your favourite non-dairy milk and add the syrup to taste. I like about 3 tablespoons per 1 cup non-dairy milk.Store leftovers in an air-tight container in the fridge for up to a week.

Hey Sam! Thank you for this recipe from another Sam. I have recently decided to be dairy free as I have done it before and my body just felt good.
