It's like having a mint chocolate milkshake for breakfast-but made with wholesome, plant-based ingredients. Mint chocolate chip ice cream has always been one of my favorite flavors because it's creamy, refreshing, and chocolatey all at the same time! This smoothie version is healthy enough to enjoy every single day-even for breakfast. Win-win! It's the perfect way to cool off on a hot day or refresh after a workout.

Vegan Mint Chocolate Chip Smoothie Ingredients:
- Frozen bananas: For creamy sweetness and thick texture.
- No bananas? Use 1 cup frozen cauliflower, ½ cup plain or vanilla vegan yogurt, or ½ cup silken tofu for creaminess. Since these are less sweet, add 1-2 pitted Medjool dates or a splash of maple syrup or agave to taste.
- Plant-based milk: Any plant-based milk will work, such as oat, soy, or almond.
- Spinach: For that green smoothie boost! Makes the smoothie a bright green color and you can't taste it.
- Fresh mint leaves: For that cool, refreshing minty flavor. No fresh mint? Use ⅛ teaspoon peppermint extract and adjust to taste.
- Vanilla extract: Enhances the ice cream flavor.
- Vegan chocolate chips: For that classic mint chip flavor. Blend some in for chocolate throughout, and sprinkle extra on top for a fun garnish.
- Protein powder (optional): Add a scoop of your favorite vegan vanilla or chocolate protein powder to make it more filling.

Make This in Your Ninja Creami:
This smoothie can be adapted for the Ninja Creami! Blend as directed, then pour into a Creami pint container (do not exceed the max fill line). Freeze for 24 hours, then spin using the "Smoothie Bowl" or "Lite Ice Cream" setting. If crumbly, add a splash of plant-based milk and re-spin. For best results, use the full ¼ cup mint and optionally stir in extra chocolate chips using the Mix-In function after spinning.

Ingredients
- 2 frozen bananas
- 1 ½ cup plant-based milk, (such as oat or soy)
- 1 cup fresh spinach, (lightly packed)
- ⅛ - ¼ cup fresh mint leaves, (lightly packed)
- 1 tablespoon vegan chocolate chips, (plus more for garnish)
- ½ teaspoon vanilla extract
Instructions
- Add all ingredients to a blender and blend until completely smooth and creamy. If the smoothie is too thick, add a splash more plant-based milk to reach your desired consistency. Garnish with extra chocolate chips if desired and serve immediately and enjoy!

I finally have loads of mint growing in a pot on my front porch and made the smoothie. I used some frozen spinach instead of fresh as that is what I have on hand. It is so good! I'll be making this all the time now. Thanks!
