    This kale salad recipe is fresh, crunchy, hearty, and packed with flavor! Made with finely shredded kale, a zippy lemon Dijon dressing, chewy dried cranberries, crunchy almonds, and crispy chickpeas or croutons, this easy salad is anything but boring. Perfect as a healthy lunch, side dish, or meal-prep friendly salad that actually tastes delicious.

    If you've never been a kale salad person, this might be the recipe that changes your mind. The secret isn't fancy ingredients, it's how you prepare the kale. Finely shredding it and giving it a quick massage transforms it from tough and bitter into tender, flavorful greens that actually soak up dressing. Add sweet dried cranberries, crunchy toasted almonds, crispy chickpeas, and a bright lemon Dijon dressing, and suddenly kale salad becomes something you'll actually crave. The first time I made this salad, Adam took one bite and asked, "How did you get the kale so tender?" So, now you know. It's one of my favorite make-ahead lunches because it stays fresh for days without turning soggy.

    What Makes This My Go-To Kale Salad Recipe

    • Legit delicious: This isn't one of those salads you eat just because it's healthy. It actually tastes good too! Tender kale, crunchy toppings, and a bright dressing make every bite delicious.
    • Perfect for meal prep: Kale stays fresh and hearty for days without wilting like lettuce does.
    • Packed with texture: Chewy, crunchy, creamy, and tender textures make every bite interesting.
    • Customizable: This is a salad that's easy to make your own. (I share some variation ideas later in this post too!)

    Ingredients for Kale Salad

    For the Salad

    • Kale: Curly kale or lacinato kale both work in this recipe, but whatever you use, be sure to remove the tough stems.
    • Dried cranberries or golden raisins: These add a nice sweet contrast and chewy texture.
    • Toasted almonds or pepitas: For crunch.
    • Crispy roasted chickpeas or vegan croutons: I usually use crispy roasted chickpeas because they add a protein boost.
    • Vegan Parmesan (optional): This homemade vegan Parmesan is my favorite, but even just an extra sprinkle of nutritional yeast will do.

    For the Lemon Dijon Dressing

    • Olive oil: You'll also need a little extra for massaging the kale.
    • Fresh lemon juice: The acidity and brightness help balance the flavor of the kale.
    • Dijon mustard: Adds depth and also helps emulsify the dressing.
    • Maple syrup or agave: To balance the lemon juice.
    • Garlic: You just need one small clove; if your cloves are big, you can use half of one.
    • Nutritional yeast: For a subtle cheesy, savory flavor.
    • Salt and black pepper: To taste.

    How to Make Kale Salad

    1. Massage the Kale: Add the shredded kale to a large bowl. Drizzle with a few teaspoons of olive oil and massage the leaves with your hands for 1 to 2 minutes until they're darker, softer, and reduced in volume.

    1. Make the Dressing: In a small bowl or jar, whisk together the olive oil, lemon juice, Dijon mustard, maple syrup, garlic, nutritional yeast, salt, and pepper.

    1. Dress the Salad: Pour the dressing over the kale and toss until every leaf is evenly coated.

    1. Add the Toppings: Just before serving, sprinkle on the dried cranberries, toasted almonds, crispy roasted chickpeas (or croutons), and vegan parmesan.

    Tips and Variations

    • Shred the kale finely: After removing the stems, stack the leaves, roll them up tightly, then slice into thin ribbons.
    • Keep the crunchy toppings separate for meal prep: If you're making this kale salad ahead of time, store the chickpeas, croutons, and nuts separately and add them just before serving.
    • Make it oil-free: Use my go-to oil-free salad dressing and massage the kale leaves with lemon juice instead of olive oil.
    • Customize it: Try adding avocado, chopped apple, roasted sweet potato, quinoa, marinated tofu, tempeh bacon, shredded carrots, roasted beets, cucumber, sunflower seeds, pickled onions, or fresh herbs.

    Ingredients
     

    For the salad:

    • 1 large bunch kale, stems removed and very finely shredded
    • ⅓ cup dried cranberries, or golden raisins
    • ⅓ cup toasted almonds, or pepitas
    • ½ cup crispy roasted chickpeas, or vegan croutons
    • Vegan parmesan, optional

    For the dressing:

    • 2 tablespoons olive oil, (plus more for massaging the kale)
    • 2 tablespoons lemon juice
    • 1 tablespoon Dijon mustard
    • 1 tablespoon maple syrup, or agave
    • 1 small clove garlic
    • 2 tablespoons nutritional yeast
    • Salt & pepper, to taste

    Instructions
     

    • Massage the kale: Add the kale to a large bowl and drizzle with a few teaspoons of olive oil and massage with your hands for 1 to 2 minutes until softened, darker in color, and reduced in volume. This makes it tender.

    Notes

    Kale tips:  Kale is very tough, so very finely shredding the kale makes is much more tender and helps the dressing coat every bite. Massaging the kale also helps soften the leaves, reduce bitterness, and makes the salad much more enjoyable to eat.
    Best toppings: I love using my crispy roasted chickpeas for extra crunch and protein, but croutons also work great.
    Customize it: This salad is super versatile, so feel free to play around with the toppings depending on what you have on hand. Avocado, chopped apple, roasted sweet potato, quinoa, marinated tofu, tempeh bacon, cucumber, shredded carrots, roasted beets, sunflower seeds, pickled onions, or fresh herbs are all delicious additions.
    Add crunchy toppings before serving: Add the chickpeas, croutons, and nuts just before serving so they stay crunchy.
    Meal prep friendly: Unlike many salads, kale holds up well after being dressed, making this great for meal prep lunches.
    Storage: Store leftovers in an airtight container in the fridge for up to 3 days. The crunchy toppings will soften over time.
    Oil-free option: Omit the oil and massage the kale with a little lemon juice instead. For the dressing, use my go-to oil-free salad dressing instead.
