Every month, we cook one recipe together as a community, and for October we're making my Creamy Vegan Potato Soup! 🥔🍲 It's creamy, cozy, easy to make, and basically a loaded baked potato in soup form. Perfect for soup season!
And one of my favorite things about this recipe is the toppings. Load up your bowl with vegan cheese, vegan bacon, green onions, chives, vegan sour cream, or whatever sounds good to you. I can't wait to see how you make yours!
