After seeing how many of you joined in last month, I am so excited for April's challenge.

This time I wanted to go savory with this creamy, cheesy, cozy, and ridiculously satisfying recipe. This Vegan Mac and Cheese is one of those recipes you'll want to make on repeat. It's super easy, made with simple ingredients, and perfect for weeknights, meal prep, or feeding a crowd.

💡 Make it your own: I loved how many of you got creative with the brownie recipe, so feel free to share your changes, additions, ideas, or what you served it with. It's so fun to see who loved it exactly as I wrote it, and who got creative with it. Add broccoli, breadcrumbs, hot sauce, mushrooms, truffle oil, or your favorite mix-ins. I love seeing how you customize it!

And yes... I am one of those weirdos who loves ketchup on my mac & cheese!
