Perhaps you were expecting a salad when you opened this page, (I do have a Vegan Caesar Salad), or maybe you haven’t heard of a Caesar, if either one of these applies to you, you probably aren’t Canadian. This is a common hangover cure, or is just a really yummy cocktail. It is quite similar to a Bloody Mary, except it is far superior (in my humble opinion). What’s the big difference? Clamato juice. What’s clamato juice? Tomato and clam juice! Grossed out yet? As odd as it sounds, and even before veganism I thought it was odd, it’s delicious. Rich, briney, salty. Then to turn it from clamato to a caesar cocktail, you add all sorts of spices. The result is delicious, and I admit, was one of the few cheats I had since being a vegan. Cheat no more! I have figured out how to veganize it. The key ingredient? Seaweed!!
1/3 Cup Wakame Seaweed or other Dried Seaweed
1 Cup Boiling Water
1 large can or bottle or whatever of Tomato Juice (48 fl oz)
4 Tablespoons White Vinegar
1 Teaspoon Onion Powder
1 Teaspoon Garlic Powder
1 Teaspoon Celery Salt
1 1/2 Tablespoons Horse Radish
1 1/2 Tablespoon vegan Worcestershire
2 Tablespoons Molasses
Juice of 1 Lime
15-20 Dashes of Tabasco
Several Grinds of Pepper
A Couple Pinches of Salt
For the Cocktail:
1oz of Vodka (which is traditional) or Gin (which is my preference)
(booze is optional….I suppose…haha)
1 cup of our freshly made tomato juice.
1 wedge of lime
Stalk of Celegy
You may think something along the lines of “GEEEZE that’s a lot of spices”…and then hopefully you will think something along the lines of “… no wonder it’s so delicious!”
Boil your water. Put the dried seaweed in a bowl and pour in the boiling water. Let it sit while you move onto the rest of the recipe. If you haven’t worked with dried seaweed before it is really amazing stuff. The above picture is when it is dry.
One of the other gross things I noticed about clamato juice is the 4th out of 13 ingredients is MSG! So when you find yourself tomato juice, make sure it isn’t all gross like that. This brand only had 2 ingredients, tomato juice and salt. And it says it’s fancy…so I like fancy things.
Pour your tomato juice into the bowl and add all the ingredients except the seaweed and water. Hopefully by now your seaweed has cooled enough. What you want to do is squeeze as much water out of the seaweed and into the tomato mixture as you can. Don’t add the seaweed…unless you want some not so fun surprises in your drink. You can save the seaweed to make a salad! Now whisk it up. You will probably want to give it a stir every time before serving as all sorts of good stuff will settle to the bottom.
To assemble to cocktail, run the lime around the rim of the glass. Pour some of the celery salt on a plate, and then rim the glass with the celery salt. Drop in your ice cubes, booze of choice, tomato juice mixture, and garnish with the stalk of celery and the lime wedge.
