There is a new trend in town, and I had to investigate it immediately. The trend: Sweet Potato Toast! This isn't a bread made from sweet potato or anything complicated like that, this is simply slices of sweet potato that you pop right into your toaster! What? How? Who? Where? Why? Yes! Love!
This trend has exploded across the internet recently. Downshiftology, The Wonky Spatula, I Quit Sugar, and Tuulia all shared their own versions of Sweet Potato Toast goodness, where they baked the slices in the oven at 400F (200C) for about 20 minutes. But I loved Little Bits Of the most for the idea of popping the slices directly into the toast. Brilliant!
Little Bits Of is a new blog (to me), and not entirely vegan, but totally worth checking out. Kelsey has some totally drool-worthy and vegan friendly recipes. Be sure to check out the 3 ways she tops her Sweet Potato Toast, sub the tuna salad for a chickpea salad and they're all vegan!
Obviously I had to try Sweet Potato Toast for myself immediately. Anything that easy and vegan friendly is a must-try for me!
The Result:
If you are expecting the sweet potato to turn into a toast-like texture, crisp on the outside, and airy soft in the middle, this is not that. This is very much a slice of sweet potato that is soft, rich, and all things sweet potato. The slice holds together surprisingly well and doesn't flop or break too easily as I thought it might.
You could easily pile this up with your favourite toppings, or you can go the route I preferred which was just a simple swipe of vegan butter (such as Earth Balance), a drizzle of maple syrup, and a sprinkle of powdered ginger. A combo that is pretty bomb if I do say so myself.
After I posted this recipe, some people didn't seem to think it would really work! So I put this food trend to the test and made this video of my experiment.
To make sweet potato toast, take a sweet potato. (I know, this recipe is so complicated).
Very carefully slice the potato into ¼ inch slices. Once you get to the point the potato can't balance on the cutting board, I found it easiest to lay it flat, and to gently rotate the knife around the outside. Whatever method you choose, just be careful not to cut yourself!
Pop your slices right on into your toaster. Boom!
Set your toasted to the longest setting and be prepared to put it through a few cycles. My very cheap and un-wow worthy toaster took four full cycles before the potato was cooked through. Once toasted, top with your favourite dressings, make an open face sandwich, or just keep it simple with a smear of vegan butter. Yum!

Ingredients
- 1 sweet potato,, cut into ¼ inch slices
- Any toppings you like!, (I like vegan butter, maple syrup, and powdered ginger)
Instructions
- Be very careful slicing your sweet potato, don't cut yourself! Once you have your slices, pop them in the toaster. Every toaster will vary. Mine took four cycles at the longest setting before they were cooked. You can tell they are ready when the sweet potato is tender with a few browned spots.
- Spread your "toast" with any toast like toppings you like. You could even make a sandwich! I played around and my favourite combo was a smear of vegan butter, a drizzle of maple syrup, and a sprinkle of powdered ginger. It tasted like a total celebration in your mouth!

We woke up eager for breakfast. This did not live up go hyped expectations and smoke alarm went off when sweet potatoes were put in for 2nd go. Very disappointing and maybe under the broiler or in the oven would be better.

Vegan butter
* 4 tablespoons almond flour/meal if you make your own in a food processor make sure there is no skin on the almonds as otherwise you'll end up with little brown bits through your butter
* 5 tablespoons any mildly flavoured unsweetened non-dairy milk
* 1 teaspoon nutritional yeast
* 1/2 teaspoon salt
* 1/2 teaspoon apple cider vinegar
* 2 tablespoons olive oil standard or extra virgin
* 1/2 cup melted & room temperature refined coconut oil it must be refined NOT unrefined
* a pinch of turmeric optional but helps make colour a little more yellow
1. Place ground almonds, milk, salt, nutritional yeast & vinegar into a blenderand blend until smooth. If your blender is quite large it will be hard for it as there is so little to blend but stick with it. You can tip the blender slightly to one side to get it to hit the blade more.
2. Don't let the blender get too warm while it's blending or the butter can split a bit. If your blender does run a little warm then blend in short bursts and give it a break for a minute or two in between. I used the smoothie setting on mine.
3. It needs to be completely smooth with no grainy bits.
4. Pour in the refined coconut oil and olive oil then blend on full speed until velvety smooth and light and airy. It took about 1 minute in my Blendtec . If you have a less powerful blender just keep going for longer.
5. Pour into a container, cover and refrigerate. A glass jar with a lid is perfect. The time it takes to set will depend on how deep your container is. You are looking at at least a couple of hours although you can hurry it up by placing it in the freezer for a little while.

You could wrap them and store them in the fridge. I would think they would keep for about a week in the fridge. Then toast when ready! Enjoy!

No you don't need to use it all at once. I eating this daily for breakfast with avocado and an egg.
I buy fat yams and cut off a slice or two depending on the size, and first place in microwave for
11/2 minutes approx. and then pop into toaster oven and put on regular toast cycle.
Left over yam I place in plastic ziploc bag and refrigerate until the next mornings breakfast. It will last a long time.

And mashed bananas with a touch of Ginger, nutmeg and maple syrup is divine.

I didn't bother peeling it as the skin holds a lot of nutrients, so I ate the skin. If you preferred peeled, then by all means, peel away! 🙂

I don't think this is a trend yet (except in my kitchen) but I accidentally dropped a spoonful of peanut butter into my cup of black coffee recently. When I fished it out and ate it, it was absolutely delicious. So I am thinking peanut butter and coffee flavoured cookies or something would be great. It might also make a really good addition to the crumble of an apple crumble, because oddly black coffee and apple tastes great. What can I say? I'm incredibly clumsy in the mornings and often drop things into my coffee.

OMG ! Sweet Potato Toast !!! That's brilliant ! Roasted sweet potato is by far my favorite food (hot or cold, sweet or savory), but in the summer time it's hard to turn on the oven for an hour... this might be a game changer !
