    This Chipotle guacamole recipe is creamy, bright, and packed with fresh flavor, just like the restaurant version. Made with ripe avocados, lime juice, red onion, cilantro, jalapeño, and salt, it comes together in minutes and is perfect for tacos, burrito bowls, dipping, and more.

    People go wild for Chipotle guacamole (and even pay extra for it), so there must be some secret ingredient that makes it so crave-worthy, right? Well, it turns out the secret is that they keep it super simple. Chipotle's guacamole is irresistible because it's fresh, creamy, perfectly seasoned, and it lets the avocado shine. Many guacamole recipes add tomatoes, but I skip them because they can make the guacamole watery and dilute the rich avocado flavor. The other key to getting that authentic restaurant-style vibe is to keep the avocado slightly chunky instead of puréeing it smooth. This easy copycat recipe tastes just like the Chipotle version and goes with absolutely everything, from crispy tortilla chips to lentil tacos!

    • Avocados: I like to buy unripened avocados and let them ripen on my counter, which means they're less likely to be bruised by dozens of hands squeezing them at the grocery store. 
    • Lime juice: Fresh lime juice is an absolute must! It has a more vibrant flavor than bottled.
    • Salt: This is the only seasoning you need for authentic Chipotle-style guacamole.
    • Red onion: Adds a nice crisp texture to contrast with the creamy guac, along with a sharp, savory flavor.
    • Fresh cilantro: If you're not a cilantro fan, you can skip it.
    • Jalapeño: Feel free to adjust the amount to your tastes.

    How to Make Chipotle Guacamole

    1. Mash the avocados: Scoop the avocados into a medium bowl and mash with a fork until creamy but still slightly chunky.

    1. Add the flavor: Stir in the lime juice and salt. Fold in the red onion, cilantro, and jalapeño. Taste and adjust with more salt or lime juice if needed.

    Tips and Variations

    • Keep it chunky: Don't over-mash! The texture is part of what makes restaurant-style guacamole so good.
    • Adjust the heat: For milder guacamole, remove the seeds and ribs from the jalapeño. Want more heat? Add extra jalapeño or leave some seeds in.
    • Make it ahead: If you're making this for a party or meal prep, press plastic wrap directly onto the surface of the guacamole to help prevent browning. Use the guacamole within 24 hours.

    My Favorite Ways to Use Guacamole

    While my very favorite way to enjoy this Chipotle guacamole recipe is with a bag of tortilla chips, there are so many other options:

    • Added to burrito bowls
    • Spoon it onto tacos (like these tofu taco crumbles!)
    • Layered into burritos with cilantro lime rice and sofritas
    • Served alongside vegan nachos
    • Spooned onto fajita veggies
    • Spread on toast for an extra-delicious avocado toast.
    • Served alongside breakfast burritos

    Storage

    Guacamole is best enjoyed fresh, but leftovers can be stored in an airtight container in the fridge for up to 24 hours. Press plastic wrap directly onto the surface to help slow browning.

    Ingredients
     

    • 3 ripe avocados
    • 2 tablespoons lime juice, (about 1 lime)
    • ¼ teaspoon salt, (plus more to taste)
    • 2 tablespoons red onion, finely chopped
    • 2 tablespoons fresh cilantro, chopped
    • ½ jalapeño, finely chopped

    • Mash the avocados: Scoop the avocados into a medium bowl and mash with a fork until chunky but creamy.

    Notes

    Avocado tip: Use ripe avocados that give slightly when gently squeezed for the best creamy texture and flavor. When shopping for avocados, I usually prefer to buy the hard green avocados and let them ripen on my counter. The ripe avocados in the store have often been squeezed by many hands (meaning they could be bruised). If your avocados are perfectly ripe but you are not quite ready to use them, transfer them to the fridge and they will keep perfectly for several days.
    Adjust the heat: For a milder guacamole, remove the seeds and ribs from the jalapeño before chopping. For more heat, leave some in, or add more jalapeño.
    Storage: If making ahead, press plastic wrap directly onto the surface of the guacamole to help prevent browning. It is best enjoyed the same day, but will keep in the fridge for up to 24 hours.
