    Marshmallow Popcorn (Vegan Rice Krispie Style)

    A cross between salty popcorn and rice krispie squares, I bring you vegan Marshmallow Popcorn! Just 5 easy ingredients and 15 minutes for the perfect gooey, sweet, crispy, salty treat for movie night!

    I've been seeing many TikTok creators make "rice krispie popcorn", and of course, I knew I had to try it and make it vegan! I'm so glad I did. I love the sweet and salty combo of this vegan Marshmallow Popcorn. It's gooey delicious and the perfect snack to binge watch your favorite series or a movie. It will also keep fresh for a few days, so pack it as a snack for work or school, or enjoy it as a little afternoon treat!

    Why You'll Love This Marshmallow Popcorn

    • Sweet, crispy, salty, delicious: Because we know sweet and salty is the BEST combination for snacking!
    • Quick and easy to make: Just pop the popcorn and stir it with the buttery marshmallow mixture.
    • Perfect for movie night: Bags of microwave popcorn are no match for this sticky, sweet treat!

    Ingredients for Marshmallow Popcorn

    • Popcorn kernels: I like to buy popcorn kernels and the pop them in my air popper. Or you can pop them using the method you normally use (stove top or in the microwave works fine too).
    • Vegan butter: Any vegan butter or vegan margarine will work here. My go-to is Earth Balance Original Buttery Spread.
    • Vegan marshmallows: Regular marshmallows contain gelatin, making them not vegan (or vegetarian).
    • Plant-based milk or water: Just a splash of dairy-free milk or water to help thin out the marshmallow mixture.
    • Salt: And lastly a little salt to enhance flavor. I like to sprinkle more salt over the finished mixture to get those salty popcorn vibes.

    How to Make Marshmallow Popcorn

    1. Get started: Pop the popcorn and line a large baking sheet with parchment paper or lightly coat it with oil. Melt the vegan butter in a pan over medium-low heat. Stir in the vegan marshmallows until they melt.

    1. Add the next 2 ingredients: Remove the pan from the heat and quickly stir in the plant-based milk or water and salt.

    1. Stir in the popcorn: Add the popped popcorn and stir so everything is mixed well.

    1. Cool: Transfer the popcorn to the prepared pan. Sprinkle with extra salt if desired. Cool for 30 minutes, or until safe to handle.

    Tips for Perfect Marshmallow Popcorn

    • Pick out the unpopped kernels: This is important! Unlike a regular bowl of popcorn where the kernels will sink to the bottom, the unpopped kernels will stick to the rest of the popcorn here. You might unsuspectingly chomp into one and break a tooth!
    • Make sure you buy vegan marshmallows: These days you can often find them alongside the regular marshmallows at your grocery store, in health food stores, or online. A common brand name is Dandies. My store only carries they large sized marshmallows, but the mini marshmallows will be even easier to work with if your store has them.
    • Adjust the salt if you're using pre-popped or microwave popcorn: If you are using pre-seasoned microwave popcorn or bagged popped popcorn, it might be a bit salty, so make sure to omit the added salt, and use about 15 cups of popped popcorn.

    How to Store

    Once the marshmallow popcorn has cooled completely, store at room temperature in a sealed bag or container for up to 4 days.

    Ingredients
     

    • ½ cup popcorn kernels
    • 5 tablespoons vegan butter
    • 1 10oz bag (238g) vegan marshmallows, mini or large, (I used Dandies)
    • 1 tablespoon plant-based milk or water
    • ¼ teaspoon salt, (plus more for sprinkling, if desired)

    Instructions
     

    • Pop the popcorn in an air popper, or pop with whatever method you normally use (stove top or in the microwave works fine too). Pick out and discard any unpopped kernels.
    • Line a large baking sheet with parchment paper and lightly spritz it with spray oil.
    • Melt the vegan butter in a large pan over medium-low heat. Add the vegan marshmallows and stir continually until the marshmallows have melted into a gooey mass.
    • Remove from the heat and quickly stir in the plant-based milk or water, and salt. Add the popped popcorn and stir so everything is mixed well.
    • Dump the popcorn onto the prepared pan to cool and set. Sprinkle with extra salt if desired. Allow to cool for 30 minutes, or until safe to handle. Enjoy! Once cooled completely, store at room temperature in a sealed bag or container for up to 4 days.

      Why not use the jar of marshmellow creme? (Some do say vegan.)

      Why does the narrative say 15 cups of popped popcorn?! The recipe uses 1/2 kernels and that will NOT make that much popcorn...

      Wow, I can't wait to try this! Perfect for a family gathering.
      I'll have to find a local source of Vegan Marshmallows though - Amazon wants me to buy $37 worth of them! I don't even have room to store that much!
      I live in somewhat of a Vegan food desert (Lompoc CA US) but there's a store in Solvang that might have what I need, and it's only about 25 miles from here in my gas-guzzling 8 cylinder pickup truck.
