    This Vegan BBQ Sheet Pan Dinner is smoky, hearty, and packed with flavor. My Easy Vegan Greek Sheet Pan Dinner and Vegan Sheet Pan Fajitas have been reader favorites, so I knew I had to make another sheet pan meal that is just as easy and delivers more of that comfort food coziness. This Vegan BBQ Sheet Pan Dinner is exactly that. It has a rainbow of veggies (potatoes, corn, mushrooms, red onion, and bell pepper!) and smoky tofu bites, along with sweet-and-sticky BBQ sauce. This is the kind of recipe you'll find yourself making again and again!

    Ingredients for Vegan BBQ Sheet Pan Dinner

    For the Tofu Bites:

    • Extra-firm tofu: Torn into pieces for better texture. The little crags and jagged edges created by tearing the tofu hold onto the seasonings better and create a more satisfying chicken-like texture.
    • Seasonings: Nutritional yeast, smoked paprika, ground cumin, garlic powder, salt, and black pepper, add smoky, savory BBQ rub flavor.
    • Olive oil: Helps everything crisp and caramelize in the oven. Use broth for oil-free.

    For the Veggies:

    • Vegetables: I use baby potatoes, corn, mushrooms, red bell pepper, and a red onion. Don't have all of these veggies on hand? Zucchini, green beans, cauliflower florets, Brussels sprouts, or even cherry tomatoes all work well too, just make sure to keep the amounts roughly the same and don't crowd the pan too much.
    • Vegan BBQ sauce: Homemade (my BBQ sauce recipe is in this cookbook) or your favorite store-bought brand. Check the ingredients to make sure it's vegan as some barbecue sauces can contain ingredients like bacon or anchovies.

    How to Make This Vegan BBQ Sheet Pan Dinner

    1. Prepare: Preheat your oven to 400ºF and grease a rimmed baking sheet.
    2. Season the potatoes: Toss them with oil, salt, and pepper, then transfer them to half of the baking sheet.
    1. Season the tofu: Add the tofu to the bowl and toss with the remaining tofu bite ingredients. Add this to the other half of the baking sheet.

    1. Roast: Place the pan in the oven and bake for 15 minutes.

    1. Season the rest of the veggies: While the tofu and potatoes are in the oven, toss the veggies with oil, salt, and pepper.

    1. Continue roasting: Push the potatoes and tofu to the sides of the pan and add the seasoned veggies. Roast for 20 minutes more, stirring halfway through the cooking time. The veggies should be tender and the tofu should be chewy and lightly browned.

    1. Add the BBQ sauce: Drizzle the sauce over the tofu and vegetables, then bake for 5 to 10 minutes more to caramelize the sauce.
    2. Serve: Garnish with parsley and serve.

    Tips and Variations

    • Don't overcrowd the pan: As written, this recipe should fit comfortably on a sheet pan without overlapping or stacking anything, but if you add extra veggies, it could get crowded, which will steam your veggies instead of browning and caramelizing them. If needed, you can divide the ingredients among two pans.
    • Try another protein: Tempeh, Vegan Chicken, or rinsed and drained chickpeas would all work in this BBQ sheet pan dinner.
    • Make it without oil: You can use vegetable broth instead of oil if you'd like.

    Serving Suggestions

    The beauty of this vegan BBQ sheet pan dinner is that it's a complete meal on its own. But if you're hungry for more or want to stretch this out for another day or a few extra servings, you can pair it with a grain (like rice or quinoa), crusty bread, garlic bread, cornbread, salad or coleslaw.

    How to Store and Reheat Leftovers

    • Refrigerator: Transfer leftovers to an airtight container and store for up to 4 days.
    • To reheat: Warm leftovers in the microwave, a 350ºF oven, or in a nonstick skillet over medium heat until everything is heated through.

    Vegan BBQ Sheet Pan Dinner

    A smoky, satisfying, BBQ-inspired dinner all on one pan. This hearty vegan sheet pan meal is packed with spiced tofu, crispy potatoes, and loads of colorful vegetables, all roasted until golden and delicious. Perfect for summer nights or easy weeknight dinners.

    Ingredients
     

    For the Veggies:

    • 2 cups baby potatoes, (about 10 oz), halved or quartered (or sub sweet potatoes or russets, chopped)
    • 2 ears corn, husked and sliced into 2-inch rounds
    • 8 oz cremini or button mushrooms, (about 2 heaping cups), halved if large
    • 1 red bell pepper, chopped into chunks
    • 1 small red onion, sliced into thick wedges
    • 1 tablespoon olive oil, divided
    • Salt & pepper, to taste
    • ⅓ cup vegan BBQ sauce, plus more for serving
    • 2 tablespoons fresh parsley, roughly chopped (optional, for garnish)

    For the tofu bites:

    • 1 (350g/ 12.3oz) block extra-firm tofu, drained and torn into bite-sized pieces
    • 2 tablespoons nutritional yeast
    • 1 tablespoon olive oil
    • ½ teaspoon smoked paprika
    • ½ teaspoon ground cumin
    • ½ teaspoon garlic powder
    • ½ teaspoon salt
    • ¼ teaspoon black pepper
    US Customary - Metric

    Instructions
     

    • Preheat oven to 400°F (200℃). Lightly grease a large baking sheet.
    • Prep potatoes and tofu: In a large bowl, toss the chopped potatoes with ½ tablespoon of olive oil, salt, and pepper. Add to one half of the baking sheet. In the same bowl, toss the tofu with nutritional yeast, olive oil, smoked paprika, cumin, garlic powder, salt, and pepper. Add to the other half of the baking sheet.
    • Roast: Bake the potatoes and tofu for 15 minutes.
    • Prep remaining veggies: While the potatoes and tofu are baking, in the same bowl, toss the corn, mushrooms, bell pepper, and red onion with the remaining ½ tablespoon olive oil, salt, and pepper.
    • Add veggies and roast again: Remove the baking sheet from the oven. Push the potatoes and tofu toward the sides of the pan. Add the vegetables to the center third (or mix everything together if preferred). Roast for another 20 minutes, flipping or stirring halfway, until the vegetables are tender and the tofu is golden.
    • Add BBQ sauce: Drizzle BBQ sauce over the tofu and vegetables, then return to the oven for 5-10 minutes, until the sauce is sticky and caramelized.
    • Serve: Garnish with parsley and serve hot with extra BBQ sauce on the side. Enjoy with rice, quinoa, couscous, crusty bread, cornbread, or a crisp green salad or coleslaw.
      Storage: Allow leftovers to cool completely, then store in an airtight container in the fridge for up to 4 days. Great for meal prep!

    Notes

    No tofu? Sub with tempeh, or a can of chickpeas.
    Oil-Free: Skip the olive oil and instead use a bit of vegetable broth.
    Veggie swaps: This recipe is super flexible! Try using zucchini, green beans, cauliflower florets, Brussels sprouts, or even cherry tomatoes in place of any of the listed vegetables. Just keep an eye on cooking times, more delicate veggies may need a bit less time in the oven. And don’t overcrowd the pan, if needed, spread everything out across two pans to ensure even roasting and caramelization.

      Thank you for this recipe Sam. To be honest, my mom and I were a little nervous to try the tofu (we may have had tofu in the past and not liked it), but it tasted just like BBQ. Everything was delicious. We had the roasted gold potatoes, red bell pepper, zucchini, and green beans. So good. Will have to try it with the corn on the cob, etc. sometime. Looking forward to seeing what the July recipe is. I made the March brownies (delicious), but missed April and May, but would still like to make those recipes sometime, as well as others from you. Thanks again.

      BBQ Sheet Pan Dinner:

      Well, I’m not a fan of BBQ sauce—I just have to open with that. I loved all the veggies in this, though. The tofu bites are a favorite of mine anyway, so those were great. I just wish I had checked the salt content on my BBQ sauce before I started making anything. It ended up making everything incredibly salty! I’m going to try cooking more potatoes and tofu (without salt) to add to my leftovers to hopefully cut the saltiness. Also, my corn, for some reason, cooked differently than the other veggies & ended up drying out. Bummer.
      My other problem was that my pan ended up being way too small, so I had to divide it into two pans. I wasn’t sure what size pan to use, so I just used my favorite one, which is also the smallest, unfortunately.
      I don’t like mushrooms, so I left those out and just added extra onions. That worked out great, because I love onions.
      I’ll definitely make this again, but without any BBQ sauce. I think a few squirts of lemon would taste really good on this—nice and light. I will also throw some zucchini and summer squash on there. And cherry tomatoes! Maybe some Italian seasoning! Ok, well, now I’m excited to remake this!

      Loved!!! I knew my husband would love it too, because he loves BBQ. We were both quick to go back for seconds! The tofu was definitely the star of the show. I typically make a simple Greek-style sheet pan, so this was a fun (and easy!) change. It will definitely be going into the rotation.

      Definite winner. So easy and delicious! Easy to double, not too fussy in the measuring department. Obviously, the BBQ sauce is a key flavor, so pick one you know you like. I doubled and put everything on two pans so as not to overcrowd, but I tried to also cook a veggie pizza at the same time (meal prep!) and definitely didn't get as much caramelization as I would have liked (totally my fault)--but it was still delicious.

      Super fun to make …. I changed up the recipe a bit because we served it with Crispy Rice. Instead of potatoes we had cauliflower florets, added portabello mushrooms, orange/red peppers, red onion, and instead of tofu, we used soy curls.

      Everyone super enjoyed the dish. Highly recommend and would make again.

      This was really good! I added asparagus because it's in season for the next 2 minutes. It had never occured to me to make corn this way but it was amazing. Will definitely make again.

      FYI, I needed to use two baking sheets, mine are all too small to fit everything in one - everything still came out perfectly.

      Took to a picnic at the beginning of May and got lots of compliments. Quite a few people asked if "that was tofu"? Some of them thought it was boneless chicken. They all know I'm plant based so they wanted me to confirm it was tofu.

        Holy moly this is dang good bbq! Definitely going into my summer dinner rotation. Added some brussels sprouts and okra, used Trader Joe's BBQ sauce, and served with a packet of Uncle Ben's red beans and rice. Can't to have for lunch tomorrow, I think I'm going to make the whole office jealous when I heat this up, lol. Next time I might try it with Trader Joe's mustard based Carolina Gold BBQ sauce to change it up.

      I made this exactly as written, with just a couple of small tweaks based on what I had on hand: I added some fresh dill to the potatoes and corn, and used half tempeh and half tofu instead of all tempeh. Everything turned out wonderfully!

      I love BBQ season, but living in Scotland means the weather doesn't always cooperate. This sheet pan dinner is such a welcome and delicious alternative when rain keeps the grill out of action. The flavours were fantastic, the vegetables cooked perfectly, and the BBQ-coated protein was incredibly satisfying. It's easy to make, hearty, and captures all the best parts of a summer BBQ without having to step outside.
