This recipe for my vegan egg salad sandwich is even easier to make than a traditional egg salad! It takes just 10 minutes to whip up and only 7 ingredients are needed. No fussing about with boiling, cooling, and peeling eggs. A super easy and super tasty lunchtime favourite- veganized. No stinky eggs and 100% cholesterol-free!

The key ingredient in this vegan egg salad sandwich recipe is black salt which is also called, kala namak. This is what provides the egg flavour in all of my egg recipes including my vegan fried egg, vegan egg yolk, tofu scramble spice mix, and deviled potatoes. Yum!
Black salt (which is actually pink in colour) tastes and smells just like eggs! It's so very strange and cool. You can buy black salt (kala namak) at Indian grocery stores or you can order black salt on Amazon here.

Once you have the black salt this recipe is so quick in easy you can whip it up in a pinch, or make the vegan egg salad filling ahead of time for lunch another day. Serve along with some veggies and hummus, or (my fave) some salty potato chips.
Let me tell you, tasting this sandwich is like the ultimate throwback to my before vegan days. It reminds me of being a kid and enjoying lunch with my grandma on a summer day. Isn't it nice that we can recreate those taste memories?
To Make the Vegan Egg Salad Sandwich:

Chop the tofu into a small cube. For the best result, make sure you use medium-firm tofu which has the most egg-like consistency. Tofu is cooked during production, so it's safe to eat straight from the package. Learn more in my Tofu 101 guide.

Add the tofu to a large bowl along with the vegan mayonnaise, nutritional yeast, yellow mustard, green onions, black salt, and turmeric. Gently mix. If desired add table salt and pepper to taste. You can store it covered in the fridge for 2 - 3 days or enjoy right away!

When ready to enjoy, toast the bread if desired. Layer a slice of bread with a lettuce leaf and then follow with a generous serving of the vegan egg salad. Top with the remaining slice of bread and serve.
Common Questions:
How long can I store Vegan Egg Salad in the fridge?
You can store it covered in the fridge for 2 - 3 days or enjoy right away!
Can I freeze Vegan Egg Salad?
No. Freezing tofu changes the texture as it releases a lot of water so it would have a bad effect on the overall texture and recipe. But, as this is a very quick and easy recipe you can whip this up fast and easy and even store in the fridge for 2-3 days so you can enjoy during the week.
Bon appetegan!
Sam.

I have made these egg salad sandwiches several times now and it is so much better than eggs, we love it! I will keep making them. Only, I make them using two slices of bread made with ancient grains easily found in grocery stores.
Sam Turnbull @ It Doesn't Taste Like Chicken says
Love that! Ancient grain bread sounds delicious with it, Carolyn. So glad you’re enjoying the recipe 😊

Yes, we’re happy to have this delicious vegan egg salad alternative.

I really can't wait to make this, but it's hard to find medium firm tofu even though I'm in a metropolitan area...someone mentioned using chick pea tofu which I haven't tried, but maybe I should because I've seen it in several stores.
Silken and firm or super firm are the only tofus I readily see. The Asian market has others but they aren't labeled as to type.
Anyway I will try with whatever I can find because this seems so much more appetizing than chickpea salad which I often use to make a vegan tuna fish sandwiches. I love sandwiches and all the things you can add to them! Love your recipes,
Sam Turnbull @ It Doesn't Taste Like Chicken says
Hi Susan! If you can’t find medium-firm, regular firm tofu works well here too, it will just be slightly more firm, like a scramble thats cooked just a bit longer. Chickpea tofu can work too, but the flavor and texture will be a bit different. Hope you enjoy it, and I’m so glad you love sandwiches too 🥪

Simply the best online tofu 'egg' salad recipe! This is delicious. My daughter and I enjoy it on a really nice toasted multi grain bread topped with sprouts adding a side of chips and pickles! This is also a great recipe for people who tell you they don't like tofu. I practically have to hide it from my husband and I sometimes bring it in for the non vegan girls at work. Someone always asks me for the recipe and everyone loves it. I don't even cut the tofu, I just rip it and this is so fast to make. My fav tofu is extra firm and pressed so I usually use that but this is such a keeper!!!
Sam Turnbull @ It Doesn't Taste Like Chicken says
Hi Lad! This comment made my day. Thanks so much for sharing the love!
Laura says
So good. I added a little sweet relish, which reminded me of childhood, but even without this “egg” salad is delicious.
Sam Turnbull @ It Doesn't Taste Like Chicken says
Hi Laura! Sweet relish is such a nostalgic addition, love that idea. So glad you enjoyed it!
Kate says
I made this and omg I was shocked it tastes just like how I remember . Also made some for non-vegan workmate and she couldn't tell difference! Thankyou for this recipe😊. Was my first time using black salt.
Sam Turnbull @ It Doesn't Taste Like Chicken says
Hi Kate! Yay!! That makes me so happy 😄 Black salt really is magic the first time you try it. Love that your coworker couldn’t tell!

This is the best tofu egg salad recipe I have tried and it’s now a weekly staple in our house. So good that even the non-vegans were amazed.
Sherry says
I’ve been making this egg salad for months, sometimesI twice a week… It is so absolutely delicious! We use it for sandwiches, on crackers, even on Romaine leaves for lettuce wraps. The only change I make to the recipe is that I add sliced green olives with pimento… This is a fabulous recipe!
Sam Turnbull @ It Doesn't Taste Like Chicken says
Hi Sherry! Wow, that makes me so happy to hear 😍 I love all the ways you’re enjoying it, and thank you so much for the kind words!

It amazes me when people who don't follow a recipe directions, then complain that it doesn't taste good. I've made this recipe 3 times always a day before eating so the flavors meld and each time delicious.
Carolyn says
I made this recipe for vegan egg salad sandwiches topped with butter lettuce and served on health bread. It was delicious and we highly recommend it.

So happy you enjoyed it, Carolyn! That sounds like a perfect sandwich 🥪

hi Sam. I made your egg salad recipe. I go through phases where I love mustard or don't like it, and it was a dont like it time...so i decided to leave it out. I ate one sandwich last night and it was just OK. So today I followed your instructions and added some mustard.....oh my gosh it made all the diffrence...it was rich and tangy and just plain good. I will never doubt your instructions again lol 🙂 p.s I am still loving your gingerbread granola....it is just soooo good.
Sam Turnbull @ It Doesn't Taste Like Chicken says
Haha I love this so much, Christine! Mustard really does make all the difference 😄 And I’m thrilled you’re still loving the gingerbread granola too!

Diana says
This recipe is amazing! It’s my go to and have made it so many time! Perfect as is, although sometimes I add chopped celery and green onion.
Thanks Sam!
Sam Turnbull @ It Doesn't Taste Like Chicken says
Hi Diana, oh that's so wonderful! Love that it's your go-to 🙂 THanks for the review 🙂
Stacey N says
I want to make this but when I used to be able to have eggs I wouldn't add mustard. I'd only do mayo with some salt and that's it. Is the mustard important or can I leave it out and still have it taste good?
Sam Turnbull @ It Doesn't Taste Like Chicken says
Hi Stacey, you can absolutely leave the mustard out, it's just for flavor, but it will still taste great without it. If you mix up the recipe and find it needs a little extra zing, then you can always add it in at the end. Enjoy!
StaceyN says
Sadly I tried this (without mustard since I'm not a fan) and I wasn't a fan. I could still taste the tofu flavor which I do not like. It slightly reminded me of egg salad but not enough to make me continue eating it. One bite was enough for me. I'll probably throw it away if I can't figure out another way to use it to make it taste better. I was so hopeful but this was a fail for me. =(
Sam Turnbull @ It Doesn't Taste Like Chicken says
Hi Stacey, I'm sorry it didn’t work out for you. Every brand of tofu has a slightly different flavor, the one I use is super mild and has almost no taste at all, so it could be that yours had a stronger taste than what I usually work with. If you still have it in the fridge, you can try adding more kala namak, chopped pickles, a splash of pickle brine, a bit of lemon juice, or fresh herbs like dill or chives. If tofu is never your favourite, you might prefer my chickpea salad style sandwich instead. Hope that helps!
Deakan says
Please tell me you used every other ingredient though. Especially black salt & nutritional yeast. Those two ingredients are absolutely necessary to the recipe.
Stacey N says
Yes, Deakan I followed the recipe and used everything except the mustard which I specifically asked about leaving out before trying the recipe. It just wasn't for me at all.
Sam, I had already tossed it in the trash and I'm not willing to waste money to try again. Thank you for the advice though!

I make this all the time for breakfast and make sure I have enough for a couple more mornings. Love this recipe! I do add celery because that’s how I grew up eating egg salad.
Sam Turnbull @ It Doesn't Taste Like Chicken says
Aww yay! That makes me so happy, thanks for the review Shelley!

so quick and yummy! will definitely make this recipe a go to lunch
Sam Turnbull @ It Doesn't Taste Like Chicken says

Jennifer W says
I make this all the time!! The first time I made it, all I had was silken tofu so I just used that. I skipped the green onions and use slightly less mayo. I have it open faced on toast and it reminds me of scrambled eggs! I love it in the morning with my coffee! It’s great because I use the shelf stable kind of silken tofu so I always have it on hand and can make it whenever the urge hits! Love it!
Sam Turnbull @ It Doesn't Taste Like Chicken says
Oh I love that! So thrilled you love it so much Jennifer!!
