    For those of you who are fans my Vegan Mac & Cheese Powder, or Tofu Scramble Spice Mix, you are going to LOVE this Homemade Vegan Ramen Seasoning! This recipe is another secret weapon for convenience. Homemade Vegan Ramen Seasoning is super duper easy to make. Just add all the ingredients to a bow or jar and stir or shake. That's it!

    My recipe makes about ¾ cup of seasoning which is enough for 8 bowls of ramen, but feel free to multiply or reduce the recipe as you see fit. Store it in an airtight container in your pantry, and it will stay fresh for a year or even longer. This means you're always just minutes away from a hearty, heartwarming bowl of ramen, no matter when the craving strikes.

    This ramen is so easy to make and absolutely delicious!

    To make the ramen, pick up a package of plain ramen noodles. Your grocery store should carry them in the Asian section or health food section of your grocery store. Or you can order them online. They are also shelf stable, so you can store them for a long time and have everything you need on hand for an easy dinner or lunch.

    When you are ready to cook your noodles, boil them following the package timing, then stir in the homemade vegan ramen seasoning. This is where your ramen becomes a canvas for your cravings. Load it up with sliced carrots, earthy mushrooms, fresh green onions, toasty sesame seeds, crisp bok choy, savory nori, tofu or seitan for some extra protein oomph, shelled edamame, fragrant Thai basil, or sweet corn kernels. The possibilities are endless, and you can customize it to suit your taste buds every single time. It's also a great way to use up leftover vegetables in your fridge! To finish it I love to add a little drizzle of sesame oil. This really brings all the flavors together for the perfect warming bowl of ramen.

    How To Make the Homemade Vegan Ramen Seasoning:

    Pour the noodles and broth into a bowl, drizzle with a bit of sesame oil, and then top with your favorite vegetables and toppings.

    Ingredients

    For the Homemade Vegan Ramen Seasoning:

    • 5 tablespoons vegetable broth powder
    • 3 tablespoons shiitake mushroom powder, (optional but adds depth, see notes)
    • 2 tablespoons onion powder
    • 4 teaspoons garlic powder
    • 2 teaspoons salt, (reduce or omit as preferred)
    • 1 ½ teaspoons ground ginger
    • ½ - 1 teaspoon cayenne, (optional for spicy ramen)

    To Make Vegan Ramen:

    • 1 serving (about 2.1oz/ 60g) dried ramen noodles
    • small drizzle sesame oil, (highly recommend)
    • Toppings of choice such as: carrot, mushrooms, green onion, sesame seeds, bok choy, nori, tofu, seitan, shelled edamame, Thai basil, or corn kernels

    Notes

    Mushroom Powder: this is simply made from dried mushrooms that have been ground into a fine powder. It adds a delicious rich umami to the broth. I like to make my own by purchasing dried shiitake mushrooms and blending them in my blender or food processor until they are powdered. You can also buy shiitake mushroom powder online, in health food stores, or in international grocery stores.

      Who would think? This was amazing!! Saw your recipe and had lunch for one to plan. Been wanting a bowl of simple ramen all month. Quickly put this blend together but had no vegetable broth powder. I use a wet mix. So made the broth in the pot, mixed the blend and added in with some broken pieces of tofu, a few vegan gyozas and a bit of miso I added at the end. Absolutely delicious!!
